 2 cups jicama, peel and cut into thin strips
 1 green apple, cut into thin strips
 1 cup green cabbage, shredded
 2 carrots, peeled and grated
 1/4 cup fresh cilantro, chopped
 2 limes, juiced
 2 tablespoons olive oil
 1/2 tablespoon maple syrup or agave
 slat and pepper to taste
PREP:

Peel and cut jicama into strips.

Cut apple into strips.

Shred cabbage.

Peel and grate carrots.

Chop cilantro.

In a large bowl, toss chopped ingredients with lime juice, oil, and maple syrup. Season with salt and pepper to taste.
