
2 small heads of radicchio, shredded
2 medium oranges, seedless, peeled and chopped
4 scallions, chopped (white and light green parts only)
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon maple syrup
1 teaspoon Dijon mustard
1/2 tsp sea salt
fresh black pepper, to taste

Shred and wash radicchio.

Peel and chop oranges.

Add radicchio, oranges, and scallion to a large salad bowl.

Whisk together oil, vinegar, maple syrup, mustard and salt. Pour on salad and toss well. Season with salt and pepper.
