Wash, prepare, and chop fruit as needed [remove seeds, stems, etc.].
Add fruit to sauce pan and simmer over medium heat until fruit breaks down. Mash with a fork to break apart and create a smoother jam.
Remove from heat and stir in honey and lemon juice.
Stir in chia seeds and let stand for 10 minutes to thicken. If you want a thicker consistency, stir in more seeds a teaspoon at a time.
Transfer to a glass jar to cool.
Store covered in refrigerator for up to two weeks.
