Orange Wild Blueberry Quinoa Bowl With Cardamom

1/2 cup quinoa, [yields 1 cup cooked], or use leftovers!

1 cup unsweetened vanilla almond milk

2 oranges, segmented

1 cup frozen wild blueberries

1/4 cup unsweetened shredded coconut

1/4 tsp ground cardamom

1/8 tsp ground nutmeg

1 tablespoon maple syrup



1Make quinoa according to directions: 1/2 cup quinoa:1 cup water.

2Segment orange [here's a great video "how to":


1Place quinoa, milk, cardamom, and nutmeg in bowl. Stir to combine. Divide between 2 bowls.

2Add blueberries, coconut, and orange.

3Drizzle with added maple syrup if desired.
