 2 peaches, grilled
 5 cups spinach
 ¼ cup almonds, blanched and slivered
 1 tablespoon coconut oil, melted
 ¼ cup white balsamic vinegar
 2 tablespoons olive oil
 ¼ teaspoon salt
Prep:

Cut and remove pits from peaches.

Make:

Preheat grill pan.

Brush cut side of peach halves in coconut oil, sprinkle with salt, and place on grill pan.

Watch peaches carefully, and once grill marks are present ( 5-10 minutes) take off grill and let cool for 2 minutes.

Once cooled, slice peaches and combine with spinach and almonds in a large bowl.

Drizzle with olive oil and vinegar. Season with salt to taste.
