Cinnamon Spiced Pepitas

2Preheat oven to 325 degrees F.

3In a large bowl, toss pepitas with oil, maple syrup, cinnamon, ginger, and salt until well-coated.

4Place pepitas on a parchment-lined baking sheet and roast in oven for 8 minutes.

5Remove from oven and let stand until cool.


1 cup pumpkin seeds [pepitas]

1/2 teaspoon grape seed oil [or other mild flavored oil]

2 teaspoons maple syrup

3/4 teaspoon cinnamon

1/4 teaspoon ground ginger [or more for spice]

1/8 teaspoon salt
