 2 large cucumbers
 3 tablespoons lemon juice
 1 small shallot
 1 garlic clove
 1/3 cup dill
 1/4 cup flat leaf parsley
 2 tablespoons olive oil
 1/4 cup radish finely chopped
 1 1/2 cup greek yogurt [for vegan version use 1/2 avocado]
PREP:

Coarsely chop cucumbers, dill, and parsley.

Chop radishes finely.

MAKE:

Place all ingredients, but radish, in a blender and process until smooth.

Season with salt and pepper and garnish with radishes.
