 2 beets, cooked and peeled [buy pre-packaged to save time]
 1 1/2 cups canned white beans, drained and rinsed
 1/2 cup tahini
 3 cloves garlic, peeled & chopped
 1 tablespoon olive oil
 1/2 cup lemon juice
 1 teaspoon salt
 1 1/2 teaspoon ground cumin
 2 red peppers, sliced into sticks
 1 large cucumber, cut into sticks
 2 carrots, peeled and cut into strips
Prep:

Preheat oven to 375 F.

Wrap beets in aluminum foil and bake for 45-60 minutes, until soft enough to cut with a knife. Peel when cooled.

Peel and chop garlic.

Juice lemon.

Cut vegetables.

Make:

Place all ingredients (except peppers, cucumbers, and carrots) into a food processor and process until smooth. Add more oil if you want a thinner consistency.

For an interesting display, place hummus in glass jars or cups and push in veggie sticks.
