11. Place milk, oatmeal [or buckwheat], chia seed in a large mason jar with lid. Shake until incorporated and let stand for 10 minutes.

22. Add chopped apricot and maple syrup and shake again.

33. Let stand for 4 hours or overnight.

44. Stir well before serving. Top with nuts and apricot.


2 cups unsweetened almond milk

1 cup oatmeal [or quick-cook buckwheat groats]

3 tablespoons chia seed

3 apricots, chopped

2 tablespoons maple syrup

1 apricot, sliced

1/4 cup macadamia nuts, chopped

1 tablespoon unsweetened coconut flakes
