It’s Taco Tuesday at Living Plate!

These Veggie Tacos are abundant with authentic flavor and jam-packed with health-promoting ingredients. Students in our Nutrition Boot Camp whipped them up and they were a huge hit!

Black Beans and Garbanzo Beans  offer a powerhouse combination of protein and fiber that work to balance and regulate blood sugar by steadying the rate of dietary sugar’s movement through the digestive tract.  This may help prevent obesity and type 2 diabetes.  Furthermore, the high concentration of soluble fiber found in legumes is also considered to help protect against heart disease.

Onions and Garlic are both members of the Allium family of plants and have a unique combination of flavonoids (phytonutrients) and sulfur-containing nutrients that help to promote cell health and prevent inflammation.  Evidence suggests that the anti-inflammatory compounds like those found in both onions and garlic may help prevent chronic diseases such as cancer and heart disease.
