At the Living Plate Nutrition Education and Counseling Center, expect the highest level of care and valuable learning experiences from our nutrition and culinary experts. Private practice dietitians operate independently at the center, and have a range of expertise in treating various health concerns with nutrition.

With a background in culinary instruction, I have been passionate about food and nutrition for more than two decades. I established Living Plate as a place where registered dietitians can inspire wellness through nutrition education that incorporates food experience.

Incorporating culinary experiences into our science-based approach just makes sense to me.  The most satisfying part of my job is developing programs and tools that make a positive difference on the health of our communities by instilling confidence through the kitchen.

Elisa Scafuto, MS, RDN

I was drawn to nutrition and dietetics early in my life – I am a certified foodie! I grew up with organic vegetables from my backyard that were incorporated into healthy home-cooked meals each and every day. While I have a background in oncology and cardiovascular disease prevention and management, I also enjoy working with younger children and adolescents.

Truthfully, I could TELL you what to do – my education has prepared me for that. But if I can SHOW you what to do and HOW to do it – now that is where we will see behavior change. I love the idea of shedding light on those boundaries that may be preventing you from achieving your wellness goals.

As one of the private practice Registered Dietitian Nutritionists at Living Plate Nutrition Education Center, I provide medical nutrition therapy and nutrition counseling. I am also responsible for facilitating group classes that guide you to sustainable health behavior change. As a registered dietitian for 25 years, I have had experience with many medical conditions as well as general wellness and weight loss counseling.

The most satisfying part of what I do is improving your quality of life. I promise to give attention to the good, the courageous, and the “ amazing” in you. Whenever I see them, I will highlight the skills and traits and strengths that you possess and that are available to you as you work at improving your life.

Ellen Petrosino, MS, RDN

Motivated to provide a healthy diet for my family, but confused by the conversation around what foods were “good” or “bad” foods, I decided to make a mid-life career change to become a Registered Dietitian Nutritionist. Today, with my evidence-based training, I emphasize a balanced plate filled with nourishing whole foods as well as convenient and delicious ways to prepare them.

I want to take the judgement, and guilt out of your relationship with food. I strongly believe that your diet should fit your life, not the other way around. In our sessions we will talk about what you enjoy eating and how we can reinvent your favorites to support your goals. Working together, we will build new habits and create practical solutions for roadblocks that are holding you back. No quick fixes, no dramatic diets that turn your life upside-down – just small, sustainable changes that will set you up for long-term success.

Liz Villano

Practice Manager

As the Practice Manager at Living Plate, I am the first point of contact when you walk into our office. My goal is to make you feel welcome so that, right from the start, you can begin to enjoy the uniqueness of our mission and philosophy. It is so exciting to be part of a team that not only practices what they preach, but focuses on providing you with the most innovative, science-based experience available.

The Living Plate kitchen is always pumping out delicious culinary inspirations – I am inspired to bring these foods into my own home by using our meal plans! I recognize that in making these foods myself, I am bringing lasting health benefits to my family. You, too, will be inspired. I promise.

I have been a Flight Attendant with American Airlines for over 30 years. Traveling around the world exposes me to a variety of cuisines that utilize so many herbs and spices. It is exciting to see our culinary team taking advantage of international flavors to create simple, health-promoting and flavorful recipes for our meal plans.

I recently graduated from Hunter College, School of Urban Public Health, in New York City this past May with a Master of Science in Nutrition. In August of 2018, I will be moving to Morgantown, West Virginia to begin my dietetic internship at West Virginia University Hospitals, Inc, with the ultimate goal of becoming a Registered Dietitian. 
After earning a Bachelor of Arts in Communication Studies from the College of New Jersey and working in various public relations and marketing positions, I realized that I wanted to pursue my passion for food and nutrition in order to help others make positive health and lifestyle changes.
At Living Plate, I assist with meal plan management, front desk administrative duties, and cooking and education classes. In addition to my experience at the Center, I have volunteered at a summer weight loss camp and in Morristown Medical Center diet office, and taught nutrition to underprivileged children in the Philippines.

I recently finished my Master of Science degree in nutrition communication and behavior change from the Tufts University School of Nutrition Science and Policy. I am now in the Didactic Program in Dietetics at Simmons College, where I am studying to become a Registered Dietitian.

Prior to moving to Boston, I graduated cum laude from Princeton University with a Bachelor of Arts in Italian. I wrote my senior thesis on a culturally significant Italian cookbook. After college, I was the Marketing and Public Relations Manager for Great Performances, a leading New York City catering and event planning company with its own organic farm.

My pursuits are built on the idea that good health can be achieved through good nutrition. Studying Italian culture and spending time with my Italian and Portuguese relatives has illuminated the value of simple and fresh ingredients, cooking at home, and the shared experience of dining.

Emily DaCosta

Marketing and Production Assistant

As part of the Living Plate Team, my job includes creating educational materials, recipe videography and photography, testing new recipes on our weekly “Test Kitchen Tuesdays,” and writing articles for the blog.  It is wonderful to be part of a team that truly focuses on providing clients with long-lasting and positive change.  Living Plate aims to make you feel comfortable with those lifestyle changes, by teaching you everything you need to know to bring optimal health into your home.

In August, 2018, I will be entering my first year as a graduate student at the University of Southern California Leonard Davis School of Gerontology, where I will be pursuing a Master of Science in Nutrition, Healthspan, and Longevity to ultimately become a Registered Dietitian.  I firmly believe that good nutrition can positively alter one’s health, as I have seen it impact many lives, including my own.

After earning a Bachelor of Science in Psychology from Villanova University, and working at Living Plate for the past two years, I have realized how intrinsically connected Psychology and Nutrition are.  I have chosen this career path because my goal is to continue empowering others to live a long and healthy life!

I have been greeting clients at the Center since 2016.  I am responsible for ensuring that visitors have a great experience the second they walk in the door.  In addition to coordinating appointments, greeting clients, and processing paperwork for the dietitians,  I also assist with our cooking demonstrations and community events.

Working at Living Plate has increased my awareness of good nutrition and I am constantly incorporating healthful tips into my own life and into food preparation for my family.  I take full advantage of being in this space!

I have been an Instructional Aide with Special Education children for over 18 years.  Prior to that I worked in the Relocation industry assisting corporate transferees with their moves.
